Americans moving to Amsterdam...Questions?

I just have a couple of questions for anyone that might be able to help me. My fiance, me, and preferably our little chihuahua, Sassy might be moving to Amsterdam, Netherlands next year for my job. Would we store our belongings over here in the US and move to a furnished apartment? Can we take our puppy dog? What is it like living in Amsterdam...we live in Texas. Is it that much of a culture shock? Compared to prices in the US is Amsterdam pretty high a.i. food, rent, clothing, utilities? Does the government take half of your salary like Germany? Anything to watch for or be careful of?

Please just give me any opinions or experiences.

I think this would be a wonderful opportunity for me and I would really love to go, but I am unsure(cautious).
Do they watch cable television...will we be able to watch American TV still....Dish Network? What kinds of food do they eat over there...what do the Dutch do for fun?
